Online learning & assessments – Work through the theory at your own pace in our easy-to-use student portal. Save your progress and return anytime. Assessments include multiple-choice questions and short video demonstrations (e.g. correct handwashing, checking use-by dates, safe food handling). You can record these on a smartphone or similar device.
Workplace assessment – Students must organise access to a commercial kitchen (such as a café, restaurant, catering service, or community kitchen). An approved industry expert observes you over a minimum of six hours, and your host site must complete a Pre-Approval Declaration Form reviewed by Eclipse Education before shifts begin.
We provide all forms and guidance once you enrol, and our team reviews and approves the workplace and supervisor before the assessment begins. The responsibility for finding a suitable commercial kitchen lies with the student, but we make the process as simple and supported as possible. During your shifts you also complete three short digital records on your device — the Hand Hygiene Event Log, Shift Hygiene Record, and Hygiene Hazard Report — via the Eclipse Education portal. You will need your device accessible during shifts.
Standard enrolment requirements
These apply to all nationally recognised VET training.
Photo ID: required before your assessment evidence can be accepted.
USI (Unique Student Identifier): required before your Statement of Attainment can be issued. Free to create at usi.gov.au.
LLN and digital literacy check: completed at enrolment to confirm the course is suitable for you. Support options are available if needed.

The Use hygienic practices for food safety (food handling course) is a nationally accredited unit of competency from the Hospitality Training Package. There are no prerequisite courses required to undertake this unit of competency.
After completing this unit you can work in food production and it is recommended for anyone who handles food for sale or distribution to customers.
