Online learning & assessments – Work through the theory at your own pace in our easy-to-use student portal. Save your progress and return anytime. Assessments include multiple-choice questions and short video demonstrations (e.g. correct handwashing, checking use-by dates, safe food handling). You can record these on a smartphone or similar device.
Workplace assessment – Students must organise access to a suitable operational food preparation or food service environment, such as a café, restaurant, catering service, community kitchen, canteen, commercial kitchen or other approved food service workplace. An approved industry expert observes you over a minimum of six hours, and your host site must complete a Pre-Approval Declaration Form reviewed by Eclipse Education before shifts begin.
We provide all forms and guidance once you enrol, and our team reviews and approves the workplace and supervisor before the assessment begins. The responsibility for finding a suitable operational food preparation or food service environment, such as a café, restaurant, catering service, community kitchen, canteen, commercial kitchen or other approved food service workplace, lies with the student, but we make the process as simple and supported as possible. Eclipse Education may contact the workplace, supervisor or industry expert to verify the workplace details, observer role and authenticity of submitted evidence. During your shifts you also complete three short digital records on your device — the Hand Hygiene Event Log, Shift Hygiene Record, and Hygiene Hazard Report — via the Eclipse Education portal. You will need your device accessible during shifts.

Photo ID: required before your assessment evidence can be accepted.
USI (Unique Student Identifier): required before your Statement of Attainment can be issued. Free to create at usi.gov.au.
LLN and digital literacy check: completed at enrolment to confirm the course is suitable for you. Support options are available if needed.

Assessment methods:

Video demos – Record yourself completing practical food safety tasks (such as washing hands, checking use-by dates, or using barriers when handling food). Videos can be uploaded directly from a smartphone or tablet through our easy-to-use portal.
Workplace evidence – Observed by an industry expert in a suitable operational food preparation or food service environment, such as a café, restaurant, catering service, community kitchen, canteen, commercial kitchen or other approved food service workplace, over a minimum of 6 hours. You must be observed demonstrating the required hygienic food handling practices on at least three occasions during your workplace assessment. The supervisor completes an online checklist. The supervisor or industry expert provides workplace evidence only. Eclipse Education's qualified assessor reviews all evidence and makes the final assessment decision. You also complete three short digital records on your device (Hand Hygiene Event Log, Shift Hygiene Record, Hygiene Hazard Report), all submitted to Eclipse Education via the portal.

The Use hygienic practices for food safety (food handling course) is a nationally accredited unit of competency from the Hospitality Training Package. There are no prerequisite courses required to undertake this unit of competency.
After completing this unit you can work in food production and it is recommended for anyone who handles food for sale or distribution to customers.
