What you'll do

  • Complete online learning and short video demonstrations.
  • Do a short workplace practice period (minimum 6 hours) in a commercial kitchen.
  • Have your supervisor or industry expert complete a short online checklist during your workplace practice.

Workplace practice explained

  • Commercial kitchen: you must arrange access to a venue that prepares and serves food to the public.
  • Duration: at least 6 hours. You can complete this in one shift or split it across multiple shorter shifts.
  • Observation and checklist: you will be observed carrying out common food handling tasks. The industry expert completes a Supervisor/Industry Expert Checklist online and submits it directly to Eclipse Education for review.

Before you start your workplace shift

  • Host Site Pre-Approval & Declaration: choose a commercial kitchen and ask a supervisor or food handler to complete a quick online form confirming the site is suitable and safe. The form is sent directly to Eclipse Education for review and approval, and must be approved before any shifts begin. We provide this form when you start your online theory.
  • We check WHS basics and may contact the industry expert to verify details.

During your shifts

  • The industry expert observes you performing tasks such as washing hands correctly, using barriers, handling food safely, and checking use-by dates on food products.
  • They complete the online Supervisor/Industry Expert Checklist during or after your shifts. It is submitted directly to Eclipse Education for assessment.

Outcomes

  • When your online theory, video demonstrations, and supervisor checklist are all marked competent, we issue your Statement of Attainment for SITXFSA005.

The accredited SITXFSA005 course includes online theory and short video demonstrations, plus a required workplace practical in a commercial kitchen where a supervisor (industry expert) observes you and completes a checklist. The Basic (non-accredited) course is 100% online, self-paced, and can be completed from anywhere.

Course Information

Our food handling courses are designed to be flexible and easy to complete at your own pace. You can stop and start whenever you like, so you don't need to finish everything in one sitting. The Basic (non-accredited) course is completely online and can usually be completed in just a few hours. The Accredited SITXFSA005 course includes the same online theory and short video demonstrations, but also requires a workplace practical observation in a commercial kitchen. During this shift (minimum 6 hours), a supervisor or industry expert will observe your food handling tasks and complete a checklist that is sent directly to Eclipse Education for review.

Both options provide practical, useful training that can be applied in a wide range of roles. The Food Safety Supervisor course is longer and more detailed, covering the same content as the Food Handling course plus additional leadership and compliance responsibilities.
