Check the food safety supervisor rules for your location

Under Food Standards Code Standard 3.2.2A, category one and category two food businesses must appoint a certified Food Safety Supervisor before carrying out a prescribed activity. This generally covers food service, catering and related retail businesses that handle unpackaged, potentially hazardous food that is ready to eat. Check the current rules from your state or territory regulator for your business. This national unit does not automatically replace a local certificate or registration.

Who must appoint an FSS?

Category one and category two businesses covered by Standard 3.2.2A must appoint a certified FSS before the prescribed activity. Business categories and local requirements can vary.

Five-year certificate currency

The FSS certificate must have been obtained within the previous five years. The FSS should provide the certificate to an authorised officer if requested.

What “reasonably available” means

The FSS should be onsite to oversee high-risk unpackaged food handling, or easily contactable, such as by phone, where suitable procedures are in place. Someone who does not regularly handle food or is never onsite is not a reasonable appointment.

Practical FSS responsibilities

An FSS supervises and instructs food handlers, manages food safety risks, prevents or corrects issues, reviews procedures, inspects food handling and shares food safety knowledge.
